Homemade Strawberry Marshmallows
Paleo and gut-friendly! I made these homemade strawberry marshmallows just in time for Valentine’s Day! What’s not to love about a fluffy marshmallow treat, especially when it’s made with gut-friendly ingredients? The recipe is also super simple, made with only four ingredients!
WHAT MAKES THESE MARSHMALLOWS GUT-FRIENDLY?
Beef gelatin. You might be thinking, how is beef gelatin supporting my gut? PREP TIME: 5 minutes
COOK TIME: 20 minutes
INGREDIENTS
1 cup maple syrup or honey
1 cup water divided in half
1/4 cup beef gelatin powder
1 cup freeze-dried strawberries
1 tsp vanilla (optional)
INSTRUCTIONS
Combine beef gelatin and 1/2 cup of water. Let it sit while you heat maple syrup and water.
Start to heat 1/2 cup of the remaining water and 1 cup of maple syrup (or honey) on the stove. Bring to a boil slowly using low to medium heat. Heat to about 240F (*note: heat this slowly. One time making these, I boiled over the mixture and it made a huge mess! Marshmallows still came out delicious!).
Combine beef gelatin mixture with the boiled maple syrup and water using a stand mixer or handheld mixer.
Mix until mixture becomes fluffy and forms soft peaks.
Add in freeze dried strawberries.
Line 8×8 pan with parchment paper. You can also grease the pan with butter if you are not using parchment paper.
Add mixture to pan and smooth out evenly.
If you want to eat these quickly like I did, stick in the fridge for an hour to let set. If you are patient, you can leave on the countertop to solidify. Ideally 4-6 hours.
Cut into cubes and store in airtight container.
