The Best Gluten Free Chocolate Chip Cookie
Gluten free chocolate chip cookies are my guilty pleasure. Anyone else relate? There is nothing better than enjoying a fresh, out-of-the-oven cookie at then end of the day. I have tried many gluten free chocolate chip cookie recipes, and this by far is my favorite!
WHAT MAKES THESE THE BEST GLUTEN FREE CHOCOLATE CHIP COOKIES?
On my checklist of what makes a good chocolate chip cookie great: texture, taste, and ingredients. This cookie is crispy on the outside, chewy and soft on the inside. In the taste category, it has the perfect balance of sweetness, and the almond flour and almond butter give these cookies amazing flavor. Beyond being delicious, this chocolate chip cookie recipe is super adaptable. I have included multiple substitutes to make it vegan and/or paleo. I add Nuzest Vanilla Protein Powder to this recipe to make the cookies a protein-packed treat. However, if you do not want to use protein powder, it can easily be taken out. Just add an additional two tablespoons of almond flour. The almond flour and butter itself make these cookies a higher protein option to a traditional cookie. Tasty, flavorful, and healthy, these truly are the best gluten free chocolate chip cookie.

COOK TIME: 18 minutes

INGREDIENTS
1 cup almond flour Thrive Market brand is certified gluten free
2 scoops Nuzest Clean Lean Vanilla Protein Powder use code PEACEOFGFCAKE for 15% off
1 tsp baking soda
1/2 cup brown sugar or coconut sugar for paleo
1/2 tsp salt
6 tbsp almond butter
6 tbsp shortening or coconut oil (vegan/paleo) or grass-fed butter
1 egg or flax egg or egg replacer
1-2 tsp vanilla
Chocolate chips — I never measure (Enjoy Life are a great allergy friendly brand)
Optional sprinkles — because who couldn’t use a little extra color!
INSTRUCTIONS
Heat oven to 350F
Mix dry ingredients (besides sugar)
In a separate bowl, beat shortening with sugar, add almond butter, egg, and vanilla and beat
Mix dry ingredients with wet until dough forms
Add chocolate chips and sprinkles
Form dough into small balls and bake for 15-18 minutes
